First resolution down…… Sprinkles Copy-Cat recipe made!

Happy New Year to all of you foodies out there! I’m starting 2014 with a confession….I am obsessed with Sprinkles cupcakes. Hello, my name is Ashley and I am a sprinkleholic. You see, I was raised to have the ability to create something for all of my sweet tooth cravings….that is until I moved around the corner from Sprinkles. Our first apartment in Houston was literally around the corner from Sprinkles and with both moves since being farther away, I have come to the conclusion there is only one way to satisfy the oh-so frequent craving…. A copy-cat recipe I can make at home…

So welcome to the new year fellow sprinkleholics…. One where you don’t have to drive forever away or pay for shipping. The best part, your red velvet can be whatever color you want and you can customize with your own Sprinkles!

Sprinkles Copy-Cat Pink Velvet
Based off a recipe on Cooking Classy


1 1/3 cups of all purpose flour
3 Tbsp cocoa powder
1/2 tsp baking soda
3/4 cup unsalted butter (room temp)
1 cup sugar & 2 Tbsp sugar
2 large eggs
1 Tbsp pink food coloring (or red if you want it to look like sprinkles red velvet)
2 tsp vanilla extract
1/2 cup whipping cream
1 tsp rice vinegar

Cream Cheese Frosting:
1/2 cup unsalted butter
6 oz. cream cheese
1/2 tsp vanilla extract
3 1/2 cups powdered sugar (sifted)

Preheat your oven to 350 degrees. Next combine all dry ingredients in a large mixing bowl (flour, cocoa powder, baking soda) and sift. In a separate bowl combine butter and sugar, mix with electric mixer for 3-4 minutes, until fluffy.. or looks like this..


Then add eggs in one at a time.. Once combined add the food coloring (whichever color you choose)… Using Pink mine looks like this (it still tastes just like sprinkles no matter the color)


Mix the cream and vinegar in a measuring cup, then alternate pouring this mixture and the egg mixture, to the dry mixture… Once mixed it will be a darker color like this..


Pour the mixture into a cupcake pan already set with cupcake liners, make each about 2/3 of the way full. Bake in the preheated oven for 18-20 minutes (until toothpick comes out clean).

Now time for the icing, start by mixing the butter, cream, and vanilla until fluffy with an electric mixer, then add the powdered sugar. Mix the combination until smooth. Once the cupcakes are cooled add icing and whatever sprinkles you want!!!! Taste them, it’s ridiculous…… My husband was so excited when he tasted them… No more $3.50 every time my sprinkleholic tendencies kick in. I’d say that’s an awesome way to start the new year!
